No wellness-focused wine drinker should let a little mercaptan compound get in the way of enjoying one of the most tasty--and healthy--rites of spring, asparagus. (Mercaptan is one of the things in asparagus that can give wines an off-taste.) If you're looking to tame asparagus in a healthy way to better pair with your glass of wine, here are some tips: roasting or broiling adds a sweet and smoky flavor to the stalks and lightly dressing barely steamed asparagus in an anchovy vinaigrette lends a savory note. Those preparations both pair well with Sauvignon Blanc, but don't be afraid to experiment. Depending on what's on the rest of your plate, other wines can work too, such as Chablis, German or Alsatian Riesling, Gewürztraminer and even certain Pinot Noirs.
